Checking in with our favorite people living their best Gaucho - Buenos Aires life. This week: @stephanie_del_toro

Law grad, actor, model, entrepreneur… Colombian-born, New York-residing Stephanie Del Toro has a lot on her plate right now – which, of course, makes her a quintessential multitasking gaucho. Born and raised in Sincelejo, an hour from the Caribbean coast, she was scouted while at university in Bogota. Since that moment, her life has become something of a Sliding Doors existence, with the glamorous worlds of international modelling and acting intersecting with continued study and legal work. “I go to castings most days and often record video castings between my meetings,” she says, depicting a hectic balancing act of the various demands on her time. 

Of course, all that was before the Pandemic – but this past year, she’s leaned into the restrictions, pivoting her focus onto entrepreneurial passion projects. “I now dedicate a few hours a day to develop my business projects: a clothing brand made with Colombian women artisans, and #callmehealthylicious.” The latter, a vegan, gluten- and sugar-free grocery store based in her home country, chimes especially with her values: “I want to influence self-love, passion and a healthy lifestyle,” she says. “I have learned that being consciously active – body, mind and soul – is the key to success.”

So, it’s no surprise that in the past year her Instagram has been getting that message out there; with a follower count as healthy as she is, Stephanie is well on her way to adding wellness influencer to her multi-hyphenate talent. So how does she fit it all in? “I start my day with gratitude and a big glass of water – then coffee! – and end it with yoga, meditation or dancing,” she says. That doesn’t seem like an answer, at first – then again: gratitude, coffee, dancing? Probably the answer to everything.
